As autumn paints the Cross Timbers region in shades of amber and gold, the arrival of Thanksgiving invites us to pause and reflect on what really matters — home, community, and gratitude. Across the Lone Star State, and especially in towns like Stephenville, Dublin, Hico, Comanche, and Hamilton, Thanksgiving isn’t just a date on the calendar; it’s a celebration of gathering, gratitude, and good food shared among family and friends.

While most Americans trace Thanksgiving to 1621 and the Pilgrim–Wampanoag harvest feast, Texas history offers its own claim to one of the first recorded “thanksgivings” in North America. In 1598, Spanish explorer Juan de Oñate led an expedition through what is now the border region of Texas and New Mexico. After surviving a harsh desert crossing, he held a feast of thanksgiving near present-day San Elizario, offering prayers of gratitude for safe passage.

Centuries later, in 1863, President Abraham Lincoln proclaimed Thanksgiving a national holiday — a moment for all Americans to give thanks, even amid hardship. By the time settlers began to populate the Cross Timbers region in the mid-1800s, the tradition had firmly taken root. Families gathered after harvest to share meals, sing hymns, and celebrate the blessings of life on the Texas frontier.

Those early celebrations set the tone for generations to come — a day when neighbors came together not just to eat, but to appreciate the fruits of their labor and the bonds of community.


Traditional Texas Thanksgiving Recipes

No Texas Thanksgiving table is complete without the aroma of mesquite smoke, cornbread, and sweet, tangy cranberry sauce. Here are a few favorite recipes that continue to bring families together.

Smoked Mesquite Turkey
A Lone Star classic — smoky, buttery, and perfectly crisp.

  • 12–14 lb whole turkey

  • ½ cup melted butter

  • Fresh rosemary, thyme, sage

  • Salt and black pepper to taste

  • Mesquite wood chips for the smoker
    Instructions: Rub the turkey with melted butter, herbs, and seasonings. Smoke at 225 °F over mesquite for about 30 minutes per pound, or until the internal temperature reaches 165 °F. Let it rest 20 minutes before carving.

Homemade Cranberry Sauce
A simple, sweet-tart side that balances every plate.

  • 12 oz fresh cranberries

  • ½ cup orange juice

  • ¼ cup brown sugar

  • Zest of one orange
    Instructions: In a saucepan, combine all ingredients and bring to a boil. Stir until the cranberries pop, then simmer for 10 minutes. Chill before serving.

Jalapeño Cornbread Dressing
A Texas twist on a Thanksgiving favorite — with just the right amount of spice.

  • 4 cups crumbled cornbread

  • 1 cup diced celery

  • 1 cup diced onion

  • 2 jalapeños, chopped and seeded

  • 1½ cups chicken or turkey stock

  • 1 tsp sage, salt & pepper to taste
    Instructions: Sauté celery, onion, and jalapeños in butter until tender. Combine with cornbread, sage, salt, and pepper. Stir in stock until moist. Bake at 350°F for 25 minutes until golden brown.
